A wise man Cliff Clavin once said:

When you get some REAL Mexican food, let me know how it is. sniff. One of the main things I miss from living in Texas.
You know, there are plenty of Mexican nationals in my part of Indiana which begs the question of whether or not the restaurants they open serve true Mexican food because everyone claims only Texas and Mexico serve it. It's very confusing to a Gringo...

In my experience, that talk has been because the Mexican nationals farther from the border - Memphis in my case - are forced to "tone down" the "real" recipes for Mexican foods in order to deal with central America's popular idea of what "Mexican" food is.
It's the same thing as Indian restaurants being forced to tone down their dishes because so many TOTAL WEENIES can't take the level of spice.
In all honesty, it depends on the restaurant, and the goals and commitment of the Mexican nationals running the place. Texas and Mexico seem to have "better" authentic Mexican food because the restaurants there feel less pressure to conform to the popular "Hey, I want quesadillas like I got at Taco Bell" perception.
Just my theory. :D We have one restaurant here in Memphis that I'd say is authentic, and it is AWESOME... and of course, absolutely NOTHING like Taco Bell, On the Border, or even El Mezcal, my favorite faux-Mexican place.

And some people need to tone down their alcohol consumption because they take off their pants for no apparent reason and accuse a wonderful person of being a terrible hostess.

I actually prefer the awesome mexican food I had in my hometown in California...we were 20 miles from the border so I am assuming it was authentic. So it's not ONLY Texas that has it. Anyway, I hate tex-mex. :p
