This is what I am making tomorrow:
Pumpkin Cake Dessert
4 eggs beaten
1 (29-ounce) can pumpkin or 2 - 15 oz cans
1 (13-ounce) can evaporated milk
1 ½ cups sugar
3 teaspoons cinnamon
1 teaspoon ginger
½ teaspoon nutmeg
1 cup melted margarine
1 package yellow cake mix (dry)
1 cup chopped nuts
Mix together eggs, pumpkin, milk, sugar and spices (if you don't have all of those spices and don't want to buy them, just buy the Pumpkin Pie spice and use 1 ½ tablespoons of it or you can used the canned pumpkin that already has the spices in it). Pour into 9 x 13-inch cake pan: sprinkle cake mix over pumpkin mixture (I used a flour sifter to get the lumps out of the cake mix and to get it sprinkled evenly over the top) making it just a little thicker on the outside edges. Then drizzle 1 cup of melted margarine over cake mix, try to get it evenly covered. Sprinkle nuts over all. Bake 1 hour only at 350 degrees (put the pan in the oven, let the oven heat back up to temperature then start the timer). Cool and then refrigerate.
Serve with whip cream if you want, but it doesnât need it.
You can use the 13x9 foil disposable cake pan if you want to take somewhere. The pans come with lids. If you use the foil pan, put in on a cookie sheet to bake, just gives it extra support.

I can bake a little. That recipe is one of of my mothers, she was/is a baker and cake decorator.

I have a recipe for a pumpkin cheesecake that I make sometimes for The Don. It's actually pretty easy to make.
