Hey!
So I have been working on this quest Quest:The Valiant's Challenge http://www.wowwiki.com/Quest:The_Valiant%27s_Challenge_(Alliance)
I just can't get it, I have done reading and there must be something I am missing... I was wondering if you can share your tips on how to do it. I am able to do the quest before that where you have to fight the knights in the ring, three of them for the daily, but this guy just seems so much harder... :(

There are several quests with that name.
If it's a dueling quest though I have some general tips.
- Dueling is about managing your 2 ranged cooldowns
- You want to use both of them every time they are available to keep your oponent's shields down
- Keeping your shields at full is always your first priority
Here is how I do every duel:
- Talk to the dude
- Charge at him as soon as he is attackable
- Use "2" to shoot him at range while turning to get back in close so he can't use his skills on me
- As soon as my charge is almost on cooldown, I sidestep run away from him and spam charge to hit him before he can get a ranged attack off on me.
- Circle around and "2" ranged attack while getting back in close
If he EVER gets a ranged shot off on me my priority is to put my shields back up and get in close to him so he can't hit me again. If you get good enough to avoid all his attacks, don't forget to renew your shields every once in a while since it's only a 60 second buff.
If you're fighting him, and he starts running away there are two things you should do:
- If your ranged attacks are on cooldown, follow him and stick to him like glue
- if your charge is ready, spam it to hit him before he can hit you.

This might be the same as what you read....
The way I've had consistent success at dealing with the champions is basically to melee when they want to, and charge them first when they try to get distance.
When you start the fight, be at range. Charge them the moment they come in range and as you go by, give it a little distance, then turn to face them quickly and shield break them. The rest of your momentum will carry you to them and you'll melee for a while, but they'll be down two shield levels. They'll usually up their shields once, then turn and trot away from you to try to get distance to charge. When this happens, back up a little and spam the charge button. You'll charge them before they do you, go racing by, you get a little distance, turn quickly, shield break them and let your momentum carry you back to them again. Melee, charge, break. Melee, charge, break: rinse and repeat. Eventually you'll get their shields down to nothing, or at the very least less than yours, and you'll out-damage them.

I have a lot of problems with dueling too. I've figured out a way to do it, but it takes a lot longer than it should, most likely. How it works is this -
1. Make sure you have 3 shields before you talk to the valiant.
2. They're gonna start walking in the direction they were originally facing, when they get far enough away that it lights up, hit shield throw. (For the big valiant ... boss or whatever, just target him when he's running in and wait for him to be a valid target)
3. Immediately after hitting the shield throw, run towards them. Don't even wait for the actual move to happen on screen, 9 times out of 10 it will, just trust it. You have to close the gap or you'll get charged.
4. Thrust away! Yeah, it's slow damage when they're yellow but you WILL win in the long run. Just trade thrusts with them, pop a shield when the counter gets low, and wait for them to run away so you can shield throw again.
This takes ... god, about 3-5 minutes per fight for the valiants. But it works, and it's a lot easier (for me), then trying to charge.

Thank you all for the help, I was able to finish it :) Yay!!!
You could also use the Gargouille method.
Find a couple of guildees to beat him down while you joust.
