I don't even like eggs...they act as a better than normal emulsifier.

I guess it is like some sort of vision quest...Perhaps I should get torqued on Mescaline and start cooking "The Great Souffle".

My vision guide, the giant land tortoise, would lead me through the desert into souffle utopia.

Gotta have the proper tools, man. Straight-sided ceramic-type baking unit and a good electric beater with whisks, plus an oven with even temperatures - electric/gas is the bomb. Then they're a piece o' cake! Hrmmmm... Well, not literally. Personally, I love souffles! In fact, if we had a choice between pie, cake and souffles, I'd definitely pick souffles.

I own a kitchen aid epicurean stand mixer. My problem with souffles is not hardware or user error; it is much deeper.

Pils, share your troublesome recipe- or at least send it to me in a PM so I can have my way with it. Its been too long since I tried a souffle of my own.
