I'll start with saying this. I like playing hunter. I do. I'm having a hell of a time with my pet though.
I originally picked a cat, cause the person who rolled the character really wanted a cat. It was purely for asthetic. Everything was all good until I upgraded bows. Now, my current bow is nothing special, it was purchased from the fletcher in Westfall, but it isn't the level 3 bow that I've apparently been using for the last 15 levels. I'm specced stright marksmanship currently.
Now, my cat can't survive even multiple greens, and can't keep aggro off me with high damage and growl. I'm guessing I'm going to need to get a better leveling pet, such as a wolf or boar. My question is two fold. Where does a level 18 go to get a new pet, and can I get rid of my pet so as to get a cat at the higher levels when I'm primarily grouping and don't have to force my pete to keep aggro?
Also, how does one keep a pet of a level with their hunter? It seems like I'm outleveling my cat by a good bit and I can only asume that it is because of quests. I'm guessing that it's just not possible to level two pets at the same time.

You probably aren't training your pet with the new pet skills you can learn (at the pet trainer vs. the hunter trainer). Your pet should be able to tank 2 yellows or 1 orange... hell it should be able to solo greens without too much problem.
Your pet gets exp every time you do until it is the same level as you. Your pet should be within a level of you if you've had them for more than 3 levels.
What level is your cat?
Lastly, the difference in pets is almost purely asthetics. At higher levels they get some unique abilities, but that's just like picking talents, they are all good (for the most part) just depends on what you want your pet to do (and what kind of food you want to keep around).

A cat pet is perfectly fine to level with and they're quite capable of handling multiple mobs. My main pet was a lion until around lvl 50. Make sure you have growl set to auto and let the pet get off a growl or two before you start hammering your target.

It can be tough to keep two pets leveled up to you but it's not impossible. I kept two within a level of me for a few levels but started to heavily favor one over the other. I've got Goethe, my wolf, and I have no desire to have another pet.

There's also this thing you have to do where you tame other pets and learn their abilities and then you can teach that ability to your "main" pet... like Killian has Goethe, and he can tame two pets at once. If he saw a mob with an ability he wanted, like Bite 8 or whatev, he would tame one of those mobs, run around with the new pet until the skill Bite 8 transferred to him, and then let the mob go and go back to teach that ability to Goethe.
I only played a hunter up to like level 20-some, so it may be this doesn't carry to higher levels, but that was how I understood it working.

Petopia is an okay site, but it hasn't been updated in ages.

No, Charge is a Boar only skill, just as Prowl is a cat only skill. Wolves get furious (ferocious?) howl, birds/bats get screech, turtles get shell shield.... and um, oh yeah, wind serpents get thier lightning attack. I think that's all of them.
And as to what Ing said. Yes, in order to get new attack abillities you'll need to tame other animals and fight with them for 2-3 mobs and you'll learn their new ability, then abandon them and pull your main out and teach him the new skill (have to make sure you have enough skill points).
tkasomething is VERY informative, but I really like the stuff over at http://www.goodintentionsguild.info/hunters.html. It is really nice, also out of date, but up-to-date enough for knowing which pets to get which abilities. Also at good intentions is a pet builder http://petcalc.tripod.com/ (okay, so it's just a link to one, but it works). Lets you plan out how to spend your pets skill points.

these are points that your pet earns everytime they gain a loyalty level or (when they reach the max loyalty level of 6) every time they level up. You can find them in the Beast Training window.
I have a cat too and he's always stayed same level as me and I've had him ever since I learned to feed him regularly! I haven't tried taming other pets to train my cat new skills. Not sure what level to try this at...

I like my pet so far and haven't really had the desire to get another one (partly cause I'm a big softy and totally attached to ny little "Tiger")... am I limiting myself? Or is highly recommended to get other pets as well? Or should I at least tame other pets to acquire their skills?
I was thinking of getting the "bite" skill for my cat. But in order to get the bite skill that is higher damage than what he already has, I need to tame a beast that is higher level than me. (Which I don't think I can do!)

Raeb is correct.
Ranulf has had Claws since he first tamed him at level 11 so keep the pet that you like. Later on you can tame additional pets for different uses, entirely up to you.

Depends entirely on what you are trying to do. For the most part you are going to be fighting things that do not cast spells, so you'll want to put most of your points into stam and armor.
Armor is basically the same as "resist <blank>" for physical damage. With that in mind, my opinion is that you should max out stam, then get your fight skills (dash/claw/bite/prowl/etc), then max out armor. For doing specific things like say strat undead or MC or AQ you could have a pet that was spec'd out for max resist shadow/fire/nature etc. But I wouldn't use any of the resists on a main pet. Just my not so humble opinion.

The resists really don't add much until you get to the end-game instances where you know you'll be facing tons of Shadow/Nature/Fire damage and such.
I leveled Ranulf up when there were no pet skills other than the growl/bite/claw type stuff so you really don't need the resists and such.
So long as you keep Growl maxed out you really shouldn't have any problems. Now the added skills for Stamina and Armor should make your pet a machine and make things quite a bit easier than it was for Ranulf.
