What will you need, what can you sell? I'll be gathering TBC crafting info here so you know what's coming.
Alchemy
Save some golden sansam, mountain silversage and dreamfoil for low-300 potions.
Alchemists will be able to specialize in Potions, Elixirs or Transmutes. Specializing will allow youto occasionally make extra items. So a potion master might get 2 Major Mana Pots for the price of one.
There are more flask recipes, but it doesn't look like making them requires an alchemy lab.

Enchanting
Save 4 GEEs and 6 LBSs for your new enchanting rod.
Other than that, there's only one enchanting recipe that uses existing mats - enchant chest exceptional health uses 2 LBS.
Enchanting will not have specializations.
In addition to enchants and oils, enchanters will also be able to make spheres that can be used in gem slots.

Blacksmithing
No TBC patterns use existing mats, so sell what you have.
Your current specializations will carry over to TBC.
Weapons and armor you make will be used as reagents for improved weapons and armor. But these are all level 70 items, so you won't see them right away.

Leatherworking

Engineering
You'll need a delicate arcanite converter to make a mote extractor. Mote extractors will be pretty useful, from what I've heard.
You can turn people into chickens. What more do you need to know?

Yep. But unlike Blacksmithing, I didn't see any patterns that required Elemental/Dragonscale/Um, that other one leatherworking.
However, I didn't look that hard. So maybe I just missed them.
I double checked, and there are indeed patterns that require a leatherworking specialization. Like tailors, you'll be able to make yourself epic armor sets. Like this: http://www.wowhead.com/?itemset=617

Also, if you hate your crafting spec, you'll be able to change it. So if Armorsmithing isn't as great as you thought, you can now switch to Swordsmith.

Very nice Shaman set there :) hopefully there will be or is a nice Hunter set also.

All Hunters are being converted to Shamans in the next patch.

VERY AWESOME. Unless there's a ton of new Swordsmith patterns, it pretty much sucks. :)

First Aid
Save a lot of runecloth. The next bandage you learn requires 330 First Aid skill to make. So you'll need enough runecloth to grind your first aid skill up to 330.
Huge Venom Sacs will also work, but those are harder to stockpile.

Lastly, all of the Grand Master trainers will require that your skill be at 300 before they teach you the next level. So if there's a skill that you've been meaning to level up, now is the time.
