Just saw this link. Yay! I'm very excited about seeing what they come up with.

I don't know whether to be excited or not. I'm skeptical, but it'd be great to finally get some utility out of the spec.
Here's a question: is there a class that is viable in all three trees in the endgame? (and I mean not ideally, but really: do big-time endgame raiding guilds use them)

Yes and no.
Druid is the most diverse class out there. You could be 100% feral and can heal very well if needed. You can dps, since.. hello... cat, and by nature of feral, tank. Druid is GEAR depandant.
Now for paladin, I really don't know. Some of it is gear and some is talents from what I have seen. I've seen a holy paladin tank and I have seen a prot paladin heal. Ret? kinda in the middle.
For shaman, the other-other hybrid it's a little awkward. Shamans don't have quick or little heals. They do have instant high damage/interrupt abilities and have some decent armor class to back it up. My shaman is resto and I can generally heal like a mofo and it's pretty mana efficient. The problem is not the mana. It's the long cast time of my heals.
Yeah, you are under 50% and my heal lands? Sweet, you are fully healed. If that doesn't work, sorry dude. Hope my ankh is up.
I see paladin similar to shaman, although shaman can never really tank. It's just that it goes beyond gear and lies more into talents. Sure a prot or ret pally can heal better then an enhancement shaman but I as a shaman surely couldn't tank.
Paladin is just that; a Paladin. Some mix between a warrior and a priest. Ret can deal some damage for sure. Honestly I never understood the ret pallys and fury warriors outside of pvp. You want to do big damage? Make a rogue, mage, warlock. Each to their own, and huzzah for diversity but really... you are a warrior lfg, but can't or totally unwilling to tank?
Just my drunken rant I guess.

Awesome, I hope they come up with something great! I think there are a couple of specs out there that need some improvement and Ret Pallies is definitely one of them, sadly.
To address Torrin, there are some differences there too. Fury warriors for instance have a lot of different abilities from rogues. They do about equal in "sustained" damage, but not the burst damage until the target is below 20% (and obviously no poisons). By the same token, they don't have to stealth around, or circle behind the target or anything, and they get to wear plate. Little differences like that. Guess I just mention it because I am enjoying my lil' fury warrior and plan to keep her that way for a bit when she's up close to 70 for a change of pace :)
